Toaster Oven Chocolate Chip Cookies

A chocolate chip cookie recipe adjusted to serve six cookies, which is maximum for standard toaster oven baking sheets.

Ingredients
  

  • 1/3 cup of all-purpose flour
  • 1/8 teaspoon of baking soda
  • 1/8 teaspoon of salt
  • 1/4 cup of unsalted, softened butter
  • 1/3 cup of granulated sugar
  • 2 tablespoons of packed brown sugar
  • 1 large egg yolk
  • 1/2 teaspoon of vanilla extract
  • 1/4 cup of chocolate chips or other mix-ins

Instructions
 

  • In a medium-sized bowl combine 1/3 cup of flour, 1/8 teaspoon of baking soda, and 1/8 teaspoon of salt. Give them a quick whisk to make sure everything is evenly distributed.

  • In a separate large bowl, beat together 1/4 cup of softened unsalted butter, 1/3 cup of granulated sugar, and 2 tablespoons of brown sugar until they’re light and fluffy.

  • Add in a large egg yolk, making sure to mix well. Then, stir in your 1/2 teaspoon of vanilla extract.

  • Slowly incorporate your dry ingredients into the wet ingredients, mixing until just combined. Be careful not to overmix, as this can lead to tough cookies.
  • Finally, fold in 1/4 cup of chocolate chips or other mix-ins of your choice.

  • Bake in a preheated toaster oven at 350°F (175°C) for 12 minutes. Check occasionally to make sure there's no burning.
